The designation of origin Verbicaro was established by ministerial decree October 21, 1995 and authorizes the production of white wines, red and rosé, in the municipalities of Verbicaro, Grisolia, Orsomarso, S. Domenica Talao and Santa Maria del Cedro, all in the province of Cosenza.
The grapes are governed Gaglioppo (locally called also black Guarnaccia) and the Greek black, present either alone or in combination assembly from 60 to ‘80%, with the Malvasia Bianca, the white and the Greek Guarnaccia white, either alone or in combination , for at least 20%. At this assembly can compete other red grape varieties, non-aromatic, approved by the province of Cosenza, up to a maximum of 20%.
The grapes must reach maximum yields of 12 tonnes per hectare and to ensure a minimum natural alcoholic strength by volume of 11% vol for the Red and 12% for the Reserve.
They are suitable for entry in the hilly terrain, pedocollinari and those in the area of plain bounded, and must be excluded grapes grown in humid and poorly exposed.
The wine may not be sold before the month of January of the year following the harvest and if made from grapes that ensure a minimum natural alcoholic strength by volume of not less than 12.5% and which has been subjected to a period of not aging less than three years, the label can qualify Reserve.
The aging period runs from January 1 next to ‘year of production of the grapes.
The Verbicaro Red is a ruby red color, more or less, with a winey, delicate and characteristic. On the palate the flavor is pleasant, dry, smooth, sometimes slightly aromatic. Great kid with either baked or roasted, hard cheeses and pasta dishes with tomato sauce.
